Duck dishes would typically be gamey and fatty. Final flavors often depend on the sauce and the marinade. Gamey and fatty meat calls for a wine that comes with fresh acidity. Bright fruit flavors help too. This is why a red wine from Burgundy is considered by many to be the classic choice, almost a no-brainer. The purity of red fruit and berry flavors offered by Pinot Noir fit the bill nicely. Workable substitutions include Pinot Noir from Oregon and New Zealand, as well as other regions in France such as Sancerre.

Burgundy wines are fast becoming a wine of choice for seasoned wine drinkers in the Philippines. Unfortunately there aren’t that many places where good red or white wines from Burgundy are served. Most wine shops in Manila prefer to carry wines of lower prices, those from Chile, Argentina and South Africa. Even in the midrange price points, wine shops in the Philippines prefer to offer wines from Italy, Spain, Australia, California and New Zealand.
