Many restaurants in Manila and some of the leading restaurants in Pampanga are beginning to place one or more duck dishes on the menu. Duck breasts have been the crowd’s favorite but a confit of whole duck is fast gaining popularity in the Philippines Duck appeals especially to Manila’s wine drinkers. For reasons that may not be known to all wine lovers in the Philippines, duck goes very well with wines, both red and white.

Duck dishes would typically be gamey and fatty. Final flavors often depend on the sauce and the marinade. Gamey and fatty meat calls for a wine that comes with fresh acidity. Bright fruit flavors help too. This is why a red wine from Burgundy is considered by many to be the classic choice, almost a no-brainer. The purity of red fruit and berry flavors offered by Pinot Noir fit the bill nicely. Workable substitutions include Pinot Noir from Oregon and New Zealand, as well as other regions in France such as Sancerre.

Burgundy wines are fast becoming a wine of choice for seasoned wine drinkers in the Philippines. Unfortunately there aren’t that many places where good red or white wines from Burgundy are served. Most wine shops in Manila prefer to carry wines of lower prices, those from Chile, Argentina and South Africa. Even in the midrange price points, wine shops in the Philippines prefer to offer wines from Italy, Spain, Australia, California and New Zealand. Those wine suppliers in the Philippines that offer a good selection of French wines tend to include mainly wines of Bordeaux in the selection.
